Food & Beverage: Practical teaching in The Westin Bellevue Dresden
The seminar "Food & Beverage" of the 1st & 2nd semester of the English taught Bachelor's Programme "International Hotel Management" took place live at the Hotel Westin Bellevue on 20 June 2018.
The seminar "Food & Beverage", led by Prof. Dr. Hartwig Bohne in the 1st + 2nd semester of the English taught Bachelor's Programme "International Hotel Management" took place live at the Hotel Westin Bellevue on 20 June 2018. Hotel director Sebastian Klink took more than three hours time for the students and explained the requirements for the work in the catering trade, calculated costs and income with the junior staff and presented his F&B outlets, from the restaurant Canaletto to the Café Pöppelmann to the beer garden "Elbsegler" and the wine cellar. In addition to the guest perspective, the students also gained an insight into the background (back-of-the-house), experienced the main kitchen in full operation, could observe the production of food for events with almost 500 people in the many preparation rooms, saw the staff rooms as well as the pool and the large cooling rooms. The motivation for the catering trade was noticeable to the hotel director and also his F&B manager, at the same time kitchen director, showed that it is a complex, varied and creative range, with which also successfully profit can be obtained. The students experienced a special practical unit which inspired them and which was talked about stamina, pleasure in design and the desire to work for guests. It was an impressive contribution to the loyalty of our students to the hotel industry, the convincing advertising for passionate commitment in the hospitality industry and at the same time for the awareness of economic key figures and economic profit orientation.
